What to ask when booking
- Pure vegetarian or vegetarian menu? Most hotels serve vegetarian food from a shared kitchen. If you need a separate kitchen, say so when you book.
- Jain, no onion or no garlic? Usually possible with 24 hours' notice on a set menu.
- Vegan? Ask about ghee, paneer and cream, which appear in most Indian vegetarian courses. Pause Café in Mumbai is fully plant-based.
- Price parity. At several places, including OKRA in Hyderabad, the vegetarian menu costs the same as the non-vegetarian one.
